The government has removed salt shakers from school canteen tables and asked bakers to gradually reduce the salt content in bread. Some manufacturers are following suit. Salt (sodium chloride) is used by the food industry, along with sugar, fat, Maillard molecules and additives, as an addictive substance to encourage consumption.
